Lucky Charms Marshmallow Treats

Happy Saint Patrick's Day! It's funny how in my twenties I would take the day off of work to drink and eat all day in an Irish pub — now in my thirties I celebrate by getting my kids green donuts and making them Lucky Charms marshmallow treats. I have to say, both are pretty awesome! My husband and I are both a little Irish, so it’s a fun way to talk about our heritage with our kids and of course introduce them to corn beef. :) One of my dreams is to take a family vacation to Ireland. Back in 2001 I went to Ireland on my own and totally fell in love with it’s beauty!

This is my first year making the Lucky Charms marshmallow treats and I loved how easy it was! There are so many recipes online, but I found this Delish recipe to be the perfect ratio of lucky charms and marshmallows. Below is the recipe, or if you would like the original, click here. The only alteration I made was less salt - I just did a 1/4 tsp.

INGREDIENTS

1/2 c. (1 stick) butter, plus more for pan

1 (12-oz.) bag mini marshmallows

1/2 tsp. kosher salt

6 c. Lucky Charms

DIRECTIONS

Grease a 9"-x-9" baking dish with butter. In a large pot over medium heat, melt butter. Add marshmallows and salt and stir until completely melted. Remove from heat and stir in Lucky Charms.

Pour into pan and smooth top, being careful not to pack cereal too tightly into prepared dish. Let cool completely before slicing and serving.
